Off the hook.
Raw vegan choc/peanut energy balls.
1/2 cup raw cashews
1/2 cup peanuts (I used natural peanut butter that I made at my local health food store that was fresh _ crunchy)
1/2 cup cacao beans
1/4 cup cacao powder
1/4 coconut oil
1/4 tsp vanilla powder
1/2 tsp Himalayan salt (conventional salt/table salt is actually poison, it is so processed these days that you need to stay away from it)
3 un-pitted medjool dates
2 handfuls of amaranth puffs (to roll balls in)
Blend raw cashews and peanuts (if not already in a crunchy butter form) in a blender until it has a crunchy butter-like texture, then add all other ingredients except for the amaranth puffs, and continue to process.
I added a tiny drizzle of filtered water (use cool boiled water if you don't have a filter) about three times to help my blender out when things got too sticky, but see how you go, ultimately you want a sticky but relatively smooth texture so you can roll it into balls.
Spread the amaranth puffs out on a plate or chopping board, scoop mixture out of blender with a spoon and roll into balls. Roll balls in amaranth puffs and then place in glass container in the fridge to set.
This recipe makes about 12 balls, they are such a great afternoon pick me up treat, enjoy!

Why you should never use conventional salt ( table salt ):

Dried at over 1,200 degrees Fahrenheit, the excessive heat alters the natural chemical structure of the salt' (info taken from this page). / MAKE SURE YOU USE PURE SEA SALT, I PREFER PINK HIMALAYAN SALT FROM MY LOCAL ORGANIC STORE – shop around to get an idea of pricing first so you don't spend too much on your salt just because it in comes in a fancy jar with a fancy sticker, unless you're into that, which to be honest I sometimes am.
